For my last two month trip done this past August & September I placed, on the bottom of my canoe where it is cool, a white styrofoam cooler with open top down to store potatoes, onions and sweet potatoes. I tried an experiment and kept one each of the original onions and potatoes through the trip, and they were in excellent condition at the end of the two months. I cut little openings around the open edge of the box to allow for ventillation and also allow water to run through during rain. Next time, of course, I'll cut the bottom out of the same kind of cooler, and the removeable top I will lift off and fit on. The styrofoam was a dense kind, better insulation than normal lightweight stuff.
